Coconut Egg Cake
Coconut is such a versatile flavor and can be used in savory or sweet dishes. This simple, easy and effortless coconut egg cake recipe makes a cake using fresh coconut.if you have no fresh coconut you can substitute it with dessicated coconut also.
Ingredientsfor 4 servings
- 125 g All purpose flour
- 3 Egg
- 125 g Sugar
- 1/2 cup Coconut
- Cashew nuts for garnishing — chopped
Preparation
Step 1
Beat eggs with sugar and a pinch of salt until stiff peaks form.
Step 2
Add all purpose flour,coconut mixture and a pinch of turmeric powder.Stir everything together thoroughly.
Step 3
Grease a saucepan and pour the mixture.Continue cooking for 25 to 30 minutes in low flame.
Step 4
Delicious spongy Coconut Egg Cake is ready.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
