Coconut Delight
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 6 servings
- 1 nos Coconut — grated
- 1 cup Hot water
- 1 Tin Condensed milk
- 3 tbsp Gelatin
- 1/2 cup Warm water
- 10 nos Cherry — optional
Preparation
Step 1
Add hot water to grated coconut and grind in a mixer for 1 minute and extract thick coconut milk from it.
Step 2
Soak gelatin in 1/2 cup warm water.
Step 3
Mix together coconut milk, condensed milk and soaked gelatin.
Step 4
Stir everything together thoroughly with a spatula for uniform mixing.
Step 5
Pour this mixture in a pudding tray and keep it in the fridge(not in the freezer) for 2hours.
Step 6
Garnish with cherry just before serving.
Step 7
Tip:- You can add finely grated coconut (say 3 - 4 tablespoon) while doing step 3. It will give a different feel when you have the pudding. Also you can garnish it according to your creativity.
