Coconut Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 500 g Chicken
- 2 nos Onion — cut into small square pieces, big
- Ginger garlic paste - 2 tsp
- 4 nos Green chillies — slit
- 1/2 Of Coconut — ground
- 3 tsp Chicken masala
- 1/2 tsp Turmeric powder
- 3 tbsp Oil
- Curry leaves, a few
- Mustard seeds, a few
Preparation
Step 1
Marinate chicken pieces with chicken masala and set aside for 1/2 hour. After that microwave for 5 minutes.
Step 2
Warm the oil in a kadai and let the mustard seeds crackle. When they start to allow to crackle, add curry leaves and big onion. cook for sometime.
Step 3
Add ginger garlic paste and sautT. 4)Add green chillies and coconut paste and sautT for 7 minutes.
Step 4
Add the microwaved chicken into it, add sufficient water, salt to taste and Put the lid on and cook for 15 minutes in a low flame.
Step 5
Coconut chicken, is ready. Serve wiyh rice, bread.etc.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
