Classic Beef Fry
A proper Kerala fry — beef tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 5 servings
- 1 kg Beef
- 2 nos Onions medium;sliced
- 6-8 nos Green chillies
- 1" piece Ginger — chopped
- 2 tsp Coriander ppwder
- 8 nos Garlic cloves
- 2 nos Tomatoes — chopped
- 1" piece Cinnamon (Karugapatta)
- 5 nos Cloves (Grambu)
- 5 nos Cardamom (Elakka)
- 4 tsp Fennel (Perinjeerakam)
- 20 nos Black peppercorns
- 1/2 tsp Turmeric powder
- 1/2 tsp Pepper powder
- 1 nos Onions — chopped
- 1 tsp Mustard seeds
- 1 cup Coconut — chopped
- 4 sprig Curry leaves
- 1 cup Coconut oil
Preparation
Step 1
Mix meat with all ingredients except cardamom, cloves, pepper corns & fennel seeds.
Step 2
Grind the above 4 spices to a masala.
Step 3
Cook the beef with the ground masala & salt in a pressure cooker till cooked(appr. 15 min.).(Around 80% cooked.).
Step 4
Heat the oil in a pan.
Step 5
Let the mustard seeds crackle.
Step 6
Add the chopped onions & sauté.
Step 7
Add the coconut pieces & curry leaves till light brown.
Step 8
Add the meat & cook till the gravy is dry & dark brown.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
