Churakka Vanpayar Thoran

Ingredientsfor 3 servings
- 1 kg Churakka finely chopped, Bottle gourd
- 200 g Van payar Black eyed beans
- 1/4 Of Coconut
- 4 nos Green chillies
- 1/4 tsp Cumin seeds (Jeerakam)
- 1/2 tsp Turmeric cpowder
- 5 nos Garlic cloves
- 1 tsp Mustard seeds
- Salt, to taste
- Curry leaves, a few
- 2 tbsp Plain rice
- 3 tbsp Coconut oil
- 2 nos Dry red chillies (Kollamulaku)
Preparation
Step 1
For preparing Churakka Vanpayar Thoran, first peel off the skin and deseed the bottle gourd.
Step 2
Clean it well and chop it finely.
Step 3
Clean well the vanpayar too and cook it separately in a pressure cooker.
Step 4
Place the grated coconut, cumin seeds, green chillies, garlic, turmeric powder and curry leaves in a mixer bowl and run it once to get a coarse form.
Step 5
Mix the above with the finely chopped gourd and add salt.
Step 6
Set a pan over medium heat and pour in the oil or a kadai.
Step 7
Let the mustard seeds crackle and cook dry red chillies, rice and curry leaves.
Step 8
Add the gourd-coconut mixture and Stir everything together thoroughly.
Step 9
Put the lid on and cook on a low flame.
Step 10
Give it a stir now and then.
Step 11
After 2 to 3 minutes, remove the lid and give it a good stir.
Step 12
Add the cooked van payar and Stir everything together thoroughly again.
Step 13
Continue to cook, till done.
Step 14
Nutritious Churakka Vanpayar Thoran.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
