Choora Fry
Kerala-style dry fry where mixed is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 5 servings
- 25o gm Choora meen
- 2 tbsp Chilly powder
- 1/2 tbsp Turmeric powder
- Salt for taste
- Coconut Oil for fry
- 1/2 tbsp Pepper powder
- Vinegar required amount to make paste
Preparation
Step 1
Make a smooth paste of chilli powder,Turmeric powder,salt,papper powder adding required amount of vinegar.
Step 2
Marinate the fish with above paste,set aside for half an hour.
Step 3
Next, add oil in frypan,fry the same,Choora fry ready.
Step 4

Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
