Choco Burfi
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 3 servings
- 1 cup Sugar
- 21/2 cup Coconut
- 11/2 tbsp Cocoa powder
- 1/4 cup Light hot milk
- 1/2 tbsp Vanilla essence
- 2 tbsp Ghee
- 5 nos Badam
- Coconut oil, to taste
Preparation
Step 1
For preparing choco burfi, heat a pan and add coconut and sugar in it. Fry for a few minutes.
Step 2
Add coco powder which is mixed with 1/4 cup of milk to the above mixture and give it a good stir.
Step 3
When the water content in coconut decreases and starts leaving the sides of the pan, add vanilla essence to it and take it off the heat.
Step 4
Press it in a flat plate which is covered with some coconut oil, so that the mixture doesn¦t get stuck to the plate.
Step 5
Garnish with badam pieces on top of it.
Step 6
Choco burfi is ready. Serve hot or cool.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
