Chilly Paratha
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.

- 3 nos Onion — chopped
- 3 nos Green chillies — chopped
- 1 nos Capsicum — chopped
- 1 nos Egg
- 1 tsp Chicken powder
Preparation
Step 1
For preparing chilly parathas, shred the parathas into small pieces.
Step 2
Cook onion, green chillies and capsicum in oil.
Step 3
Add the egg and give it a good stir.
Step 4
Add little salt, paratha, chicken powder and fry well.

Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
