Chicken With No Gravy
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 500 g Chicken — cut into normal bite size
- 5 nos Onions sliced thin and long, medium
- 3 tbsp Garlic — finely chopped
- 3 tbsp Ginger — finely chopped
- 3 tbsp Lime juice
- Chicken masala (Eastern preferred
- 2 tsp Turmeric powder
- 2 tsp Black pepper — ground
- Oil, to taste
- Salt, to taste
- 3 nos Green chillies
Preparation
Step 1
Set a pot on the stove, add the chicken pieces, salt, ginger, garlic, turmeric powder, lime juice, black pepper powder, chicken masala and cook till chicken is well cooked.
Step 2
There shouldn`t be any need to add water but add if need be.
Step 3
Cook on low heat. Initially when adding the ingredients in the pot, give it a good stir all ingredients as this brings out the water in the chicken.
Step 4
In a wok, cook the onions and green chillies, till onion is light golden brown.
Step 5
Add the chicken and cook till all water has dried off.
Step 6
Garnish with lime slices and mint leaves.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
