Chicken Ularthiyathu In Kerala Style
Kerala-style dry fry where chicken is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 4 servings
- Chicken : 4 nos ( boneless pieces
- Onion : 1 no
- Ginger : 1 inch piece
- Garlic : 2 cloves
- Chilly powder : 1 tsp
- Coriander powder : ½ tsp
- Garam masala : ½ tsp
- Pepper powder : ½ tsp
- Tomato : ½ no
- Salt, to taste
Preparation
Step 1
Cook chicken using salt and pepper powder.
Step 2
Heat a pan and add oil in it, when it gets hot add onion, ginger, garlic and tomato in it and stir until it gets brown.
Step 3
Next, add coriander powder,chilly powder, garam masala and salt to it.
Step 4
Add curry leaves also.
Step 5
Next, add chicken in to it and give it a good stir.
Step 6
Enter Step.
Step 7
Next, add very little water in to it and close it.
Step 8
Then wait for 10 minutes and then the dish is ready.
Step 9
It will take maximum 30 minutes for everything.
Step 10
This dish can be taken with chappathi.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
