Chicken Stew - Kerala Style
A gentle, coconut milk-based stew with soft vegetables and whole spices floating in a pale, fragrant broth. Kerala stew is quiet comfort food — not loud with chilli, but warm with cardamom and black pepper.
Ingredientsfor 4 servings
- 1k g Chicken
- 3 nos Potatoes
- 1 nos Carrot — chopped
- 50 g Green peas boiled
- 1/4 Of Oil
- 1 cup Onion
- 1 Dsp Ginger — sliced
- 1 Dsp Garlic — sliced
- 6 nos Green chillies slitted
- 2" piece Cinnamon (Karugapatta)
- 6 nos Cloves
- 4 Pods Cardamom
- 1 Dsp Peppercorns
- Curry leaves a, a few
- 2 Dsp Vinegar
- Salt, to taste
- 2 cup Coconut milk Thin
- 1 cup Coconut milk Thick
Preparation
Step 1
Cut the chicken into pieces. Wash and clean the pieces.
Step 2
Peel and cut the potatoes into wedges.
Step 3
Heat the oil in pan and gently fry the ingredients onion, ginger, garlic, green chillies, cinnamon, cloves, cardamom, peppercorns and curry leaves until soft and golden.
Step 4
Add the chicken pieces and fry gently.
Step 5
Add vinegar, salt and thin coconut milk.
Step 6
When the meat is half cooked, add the potato wedges, green peas, and carrot.
Step 7
Cover the pan with a well-fitting lid and cook until the meat is tender.
Step 8
When the gravy has reduced in quantity, add 1 cup of thick coconut milk and bring to boil.
Step 9
Chicken Stew - Kerala Style is ready!
Step 10
Serve the Kerala Style Chicken Stew hot with chappathi, bread or appam!
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
