- Chicken : 5 pieces
- Onion : ½ of 1 (chopped
- Green chillies : 1 no (chopped
- Garlic : 2 cloves (chopped
- Carrot : 2 tsp (grated
- Spring onions : few (chopped
- Milk : 1 cup
- Stock, to taste
- Pepper, to taste
- Vinegar : 1 tsp
Preparation
Step 1
First clean the chicken pieces. 2) Cook chicken pieces in a large pot. Add salt and pepper as needed.3) Add 2 cloves while boiling for more flavor.4) When done, drain and set aside the chicken pieces and keep the stock.5) Mince and debone the chicken pieces.6) In a saucepan, add a tsp of butter. Add garlic, onion, chillies, carrot and chicken pieces.
Step 2
Add pepper, vinegar, soy sauce and cook it.
Step 3
Add 3 ladle of stock and cook it again.8) Add the milk and required stock again and boil the soup.
Step 4
Add corn starch and thicken the soup if required. 9) Add the egg and boil for a minute.10) Vegetable and chicken soup is ready.
Step 5
Can add any vegetable in the soup for more taste.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
