Chicken Sesame Coin
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 100 g Chicken mince
- 2 tbsp Carrots — chopped
- 1 tbsp Fresh Herbs chopped, rosemary or cilantro
- 1/2 piece Onion chopped, medium size
- 1/2 tsp Garlic — minced
- 1/4 tsp Green chilly de-seeded and — chopped
- 2 tbsp Celery — chopped
- Salt, to taste
- 2 tbsp Sesame seeds
- 4 Thick White bread
- 1 nos Egg whisked
- 1/2 cup Bread crumbs
- Biscuit cutter round shape or any other
- Oil for deep frying
Preparation
Step 1
Wash the chicken mince and leave to drain and set aside.
Step 2
Set a pan over medium heat and pour in the oil, add the chopped onions, garlic and chilly and sautT till translucent.
Step 3
Add chicken and stir fry till the colour of the flesh changes to white. :- The pan should be sufficiently hot so that the chicken will not cook in its own stew.
Step 4
Season with salt and add celery. Stir till well combined and the chicken is cooked.
Step 5
Add fresh herbs and give it a good stir.
Step 6
Remove from the stove and leave to cool.
Step 7
Use the biscuit cutter and cut rounds from the bread.
Step 8
Pile the chicken mixture on top of the rounds.
Step 9
Press down firmly, removing bits that stray from the rounds.
Step 10
Lay the coins face down on sesame seeds, dip it beaten eggs and then in bread crumbs.
Step 11
Leave to chill in the refrigerator.
Step 12
Fry in hot oil the coins in heated oil till golden brown.
Step 13
Chicken Sesame Coin is ready! :- Serve Chicken Sesame Coin hot with any sauce. :- eating Chicken Sesame Coin!
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
