Chicken Sausage Fry
Slow-roasted in coconut oil with a generous hand of spices, this chicken fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 3 servings
- 5 nos Chicken sausage — cut into rounds
- 1 nos Onion — sliced
- 3 nos Green chillies split
- Curry leaves, a few
- 1/4 tsp Turmeric powder
- 1 tbsp Chilly powder
- 1 tbsp Coriander powder
- 1 tbsp Pepper powder
- Salt, to taste
- Oil, to taste
Preparation
Step 1
For preparing chicken sausage fry, marinate sausage rounds with turmeric, chilly powder, coriander powder, pepper powder and salt.
Step 2
Set a pan over medium heat and pour in the oil, fry the sausage rounds and set aside.
Step 3
In the same oil, fry onion, green chillies and curry leaves. Top it on the fried sausages.
Step 4
Chicken sausage fry is ready. Serve hot with rice.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
