Chicken Poppadom Rolls
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 6 nos Small pliable poppadom
- 100 g Chicken breast washed and — cut into strips
- 1 cup Cabbage sliced thinly
- 1 cup Carrots sliced thinly
- 1 nos Onion sliced thinly
- 1 cup French beans sliced diagonally
- Coriander leaves a few sprigs
- 1 tbsp Soya sauce light
- 1 tsp White pepper
- Salt, to taste
- Oil — for cooking
Preparation
Step 1
Marinate the chicken slices in salt, 1 tsp soy sauce soya sauce and 1/2 tsp pepper.
Step 2
Add oil in a pan and add chicken.
Step 3
Stir fry the chicken well till it is cooked. :- Do not let water come out of the chicken.
Step 4
With a spatula move the chicken to a corner of the pan. 5)Add all the vegetables and stir fry for about 1 1/2 minute( should be crisp).
Step 5
Add all the seasonings and stir with the chicken, turn off the heat.
Step 6
Moisten the edges of the poppads with water.
Step 7
Arrange the chicken filling 1/3 from the center and roll it up.
Step 8
Moisten the edges to stick.
Step 9
Use a kitchen roll paper and roll over the poppad to hold it in shape.
Step 10
Pop it into a microwave oven and microwave on high each side for 30 seconds.
Step 11
Microwave one at a time, alternatively, seal the openings with water and fry in hot oil in hot oil.
Step 12
Crunchy Chicken Poppadom Rolls are ready. :- Serve the Chicken Poppadom Rolls hot! :- eating Chicken Poppadom Rolls!
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
