Chicken Perattu
This chicken, a beloved dish from the South Indian state of Kerala, holds a special place in the hearts of food enthusiasts worldwide.
Ingredientsfor 6 servings
- 1 kg Chicken
- 4 nos. Onion medium size
- 6 nos. Tomato
- 11/2 + 1 tbsp Garlic — crushed
- 1+1 tbsp Ginger — crushed
- Curry leaves One handful
- 1+2 tbsp Pepper powder
- 2 tbsp Coriander powder
- 1/4 tsp Turmeric powder
- 2 tsp Garam masala powder
- 1 tbsp Red chilly powder
- 1 tsp Fennel seed powder
- Salt, to taste
- 3 tbsp Oil
- 3/4 cup Hot water
- Coriander leaves Few — chopped
Preparation
Step 1
Heat oil in a pan and add crushed ginger(1 tbsp), garlic and curry leaves. cook for 1 minute.
Step 2
Add turmeric powder and stir for a few seconds.
Step 3
Then add cleaned and washed chicken into it. Let it cook for 10 minutes and take it off the heat.
Step 4
Next, Heat the oil in a wide pan or uruli and add crushed ginger(1 tbsp), curry leaves and garlic (1 1/2 tbsp).
Step 5
Add onion and cook until it has softened.
Step 6
Next, add chilli powder, coriander powder, turmeric powder, garam masala and pepper powder.
Step 7
Cook for one minute until the rawness cooks out of the masalas.
Step 8
Then add sautéed chicken and Stir everything together thoroughly. Cook for 20 to 25 minutes.
Step 9
Finally add chopped tomato and cook for another 2-3 minutes.
Step 10
Check the taste, adjust the salt, add chopped coriander leaves and take it off the heat.
Step 11
Chicken Perattu is ready.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
