Chicken Paravur
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 11/2 Kgs Chicken
- 2 tsp Turmeric powder
- 3 tsp Pepper powder
- 6 tbsp Sunflower oil
- 1 tsp Chilly powder
- 4 tbsp Coriander powder
- 2 tbsp Soy sauce
- 2 tsp Garam masala
- 4 nos Onion — thinly sliced
- 4 nos Tomato
- 1 Cube Chicken stock — optional
- 8 nos Curry leaves
- 1 cup Coconut milk
- 4 tsp Salt
- 3 cup Boiling water
- Coriander leaves — for garnishing
Preparation
Step 1
Clean chicken and cut into medium sized pieces.
Step 2
Marinate the chicken with turmeric powder, 2 tsp of salt and pepper powder for 2 hrs.
Step 3
Place the chicken pieces in an oven at 200 degrees celsius for about 20 minutes.
Step 4
Heat sunflower oil in a pan or a kadai.
Step 5
Fry the onions with curry leaves in it, till onions goes golden brown.
Step 6
Add chilly powder, coriander powder, soy sauce, garam masala, sliced tomatoes and chicken stock into it and make a thick paste.
Step 7
After 20 minutes in the oven, drain the excess fluid in the oven and add the chicken into the thick paste.
Step 8
Add 3 cups of boiling water.
Step 9
Stir everything together thoroughly and cook over a medium flame for about 20 minutes.
Step 10
Season with salt.
Step 11
Add coconut milk at this stage and cook for a furthur 10 minutes.
Step 12
Turn off the heat when the gravy is reasonably thick.
Step 13
Garnish with coriander leaves. Serve hot.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
