Chicken Mayo Sandwich
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 2 servings
- 2 tbsp Boiled Grinded chicken
- 1/2 nos Carrot
- 1/2 nos Cucumber
- 1/3 nos Cabbage
- 2 tbsp Mayonnaise
- 2 nos Kuboos
- Butter for spreading
- Sauce — optional
Preparation
Step 1
Grate the carrot, cabbage and cucumber using a grater.
Step 2
Mix the grated cucumber, carrot and cabbage.
Step 3
Add the grinded chicken to this mixture. Now, pour mayonnaise to this. Stir everything together thoroughly.
Step 4
Spread butter on one side of each kuboos before stuffing them with the prepared mixture.
Step 5
The chicken-mayo sandwich is ready to eat. Use sauce to taste better.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
