Chicken Masala Varatiyathu
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.

- Chicken : 150 gm
- Onion : 1 no (slices

- Ginger : 2 tsp (chopped
- Garlic : 4 cloves (chopped
- Garam masala : 1 tsp
- Tomato : 1 no (chopped
- Coriander powder : 1 tsp
- Chilli poowder : 2 tsp
Preparation
Step 1
In a pressure cooker, add coconut oil. Add onion, ginger and garlic chopped.
Step 2
Add chicken and tomato fry well.3) Add salt, turmeric, chilli powder, coriander, and garam masala.
Step 3
Add water and cook the masala.5) When done, remove the lid and make it a dry gravy.6) In another pan, add little oil. Add onion, green chillies and curry leaves.
Step 4
When it turns brown color, add chicken and fry again.
Step 5
Very Chicken masala varatiyathu is ready.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
