Chicken Loaf Easy
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 1 cup Chicken minced & cooked
- 6 nos Bread slices
- 1 nos Onion — chopped
- 3 nos Green chillies — chopped
- Ginger garlic paste - 2 tsp
- 1 tsp Garam masala
- 1 nos Capsicum — cubed
- Coriander leaves, a few
- Pepper, to taste
- Salt, to taste
Preparation
Step 1
For preparing chicken loaf, heat little oil in a pan.
Step 2
Fry onion, green chillies and capsicum.
Step 3
Add ginger-garlic paste and fry again.
Step 4
Add garam masala and chicken. Stir everything together thoroughly.
Step 5
Add pepper and salt.
Step 6
Add coriander leaves and Stir everything together thoroughly. Remove from fire.
Step 7
Cut the sides of bread slices and dip in water and squeeze water.
Step 8
Fill 2 tsp chicken mixture and cover in bread slices.
Step 9
Fry in hot oil it in oil.
Step 10
Chicken loaf, a Dish with kids as well as elders, is ready.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
