Chicken Kondattam Kerala Style | Kerala Chicken Kondattam
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 250 g Chicken boneless
- 1 nos Onion — chopped
- 4 nos Green chillies — chopped
- 1 nos Capsicum — chopped
- 1 tsp Ginger — grated
- 5 Cloves Garlic — chopped
- 8 nos Red dry chillies
- 3 tsp Red dry chilli flakes
- 5 tsp Coconut — grated
- 1 tsp Vinegar
- 1 tsp Chilli powder
- 1/2 tsp Turmeric powder
- 2 tsp Pepper — crushed
- 1 tsp Coriander powder
- 1/2 tsp Garam masala
- 3 tsp Corn flour
- 2 tsp Tomato sauce
- 1 tsp Soy sauce
- Curry leaves, a few
- Coriander leaves, a few
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing Chicken Kondattam Kerala Style, first marinate the boneless chicken pieces with turmeric powder, 1 tsp chilli powder, salt and corn flour.
Step 2
Mix the grated coconut and chilli flakes. Set aside. Grind vinegar and dry chillies and set aside.
Step 3
Fry the chicken in oil. Set aside.
Step 4
In a frying pan, fry onion, green chillies, ginger and garlic. Fry for 5 minutes. Add the capsicum and fry again. Add chilli powder, coriander, garam masala and chilli paste. Add the grated coconut mixture and fry again. Fry till it becomes crispy. Add the soy sauce, tomato sauce and fry well.
Step 5
Add salt, curry leaves, coriander leaves and sprinkle little water. Add the fried chicken in it and coat well.
Step 6
Stir everything together thoroughly. Coat the chicken well in masala.
Step 7
Kerala Style Chicken Kondattam is ready.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
