Chicken Fry
Pan-fried until the edges go dark and crispy, this chicken fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 5 servings
- Chicken :1 k gm
- Curd : half cup
- Chilli powder : half tsp
- Masala powder : 2 tsp
- Lemon juice : 1 tsp
- Ginger garlic paste : 50 gm
- Salt, to taste
- Oil : 3 tsp
Preparation
Step 1
Blend together all the ingredients to the chicken pieces.
Step 2
Pour oil on this prepared mixture.set aside for ten minutes.
Step 3
Set a pan over medium heat and pour in the oil and fry these chicken pieces until both sides turn brown.
Step 4
Serve while still hot with chappathi or naan.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
