Chicken Franks Or Sausages Curry
Rich, fragrant, and full-bodied — this chicken curry gets its depth from slow-cooked shallots and a careful balance of chilli heat and tang. Serve with appam, rice, or porotta.
Ingredientsfor 2 servings
- 6 nos Chicken franks/sausages
- 1 nos Onion medium — sliced
- 1 nos Tomatoes medium — chopped
- Ginger garlic Paste – 1 tsp
- 1 tsp Chilly powder
- 1 tsp Coriander powder
- 1 tbsp Chicken masala powder
- 1/2 tsp Pepper powder
- 1/2 cup Water
- Curry Leaves A sprig
- 2 tbsp Oil
- Salt, to taste
Preparation
Step 1
For preparing Chicken Franks or Sausages Curry, first boil the chicken franks/sausages for around 5-8 minutes. Drain the water and cut it into medium sized round pieces.
Step 2
Warm the oil in a pan and add onions. cook until translucent.
Step 3
Add 1 tsp ginger paste, 1 tsp garlic paste and curry leaves. cook for a few minutes.
Step 4
Add tomatoes along with salt and stir till the tomatoes are mashed well.
Step 5
Add 1 tsp chilly powder, 1 tsp coriander powder, 1 tbsp chicken masala powder and stir for a few minutes till the oil separates from the masala. Add 1/2 cup water and Stir everything together thoroughly to form a gravy.
Step 6
Add the chicken sausage slices and Stir everything together thoroughly. Sprinkle some pepper powder. Put the lid on and cook for around 7-8 minutes in low heat so that the gravy is coated on the chicken franks.
Step 7
Chicken Franks or Sausages Curry is ready.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
