Chicken Curry With Coconut Milk
A traditional Kerala curry where chicken simmers gently in a spiced coconut gravy until every piece soaks up the flavours. The curry leaves and raw coconut oil finish add that characteristic Kerala fragrance.
Ingredientsfor 5 servings
- 1 kg Chicken
- 1 nos Onion — sliced
- 1 cup Coconut milk
- 3 nos Green chillies — slit
- 1 tbsp Ginger — chopped
- 1 tbsp Garlic — chopped
- 1 tbsp Coriander powder
- 2 tsp Chilly powder
- 1 tsp Turmeric powder
- Salt, to taste
- Curry leaves, a few
- Oil, to taste
Preparation
Step 1
For preparing chicken curry with coconut milk, first clean and cut the chicken and drain water.
Step 2
Mix chicken with onion, green chillies, garlic, ginger, coriander powder, chilly powder, turmeric powder and salt.
Step 3
Marinate the chicken for 10 minutes.
Step 4
Cook chicken with enough water.
Step 5
Add coconut milk and curry leaves. Do not boil.
Step 6
Chicken curry with coconut milk is ready.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
