Chicken Bhajias
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 6 servings
- 1/2 kg Boneless chicken breast fillets or thigh fillets is good
- 1/2 tsp Chillie powder
- Salt, to taste
- 1/2 tsp Lemon juice
- 1 Egg
- 2 tbsp Corn flour
- 2 tbsp Plain flour
- Oil to fry
Preparation
Step 1
Cut boneless chicken.
Step 2
Marinate this in salt chillie powder, lemon juice, egg, corn and plain flour.
Step 3
Stir everything together thoroughly.
Step 4
Coat this chicken finally in til and fry in hot oil.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
