Chicken Barbeque Grill
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 5 servings
- 1 kg Chicken Wings/Legs
- 15 nos Garlic cloves
- 2 small Ginger
- 3 tbsp Chilly powder Kashmiri
- 1 tsp Turmeric Powder
- 0.5 tsp Salt
- 1.5 cup Yogurt
Preparation
Step 1
Grind together the ingredients: garlic cloves, ginger, chilly powder, turmeric powder and required salt to a coarse paste.
Step 2
Add the mixture to the cleaned chicken wings/legs together with yogurt and Stir everything together thoroughly.
Step 3
Keep the chicken pieces for marination for about 30-60 minutes.
Step 4
Prepare charcoal grill/oven and grill it till the chicken pieces turn brown.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
