Chemmeen Cutlet
Coated in a well-seasoned batter and fried to a deep golden colour — the crunch is the whole point. Serve with a cup of strong black tea and watch them disappear.
Ingredientsfor 4 servings
- 500 g Prawns Chemmeen
- 2 nos Onion — finely chopped
- 250 g Potato cooked and mashed well
- 6 nos Green chillies — finely chopped
- Salt, to taste
- Turmeric powder A little
- 1 nos Egg
- Bread crumbs, to taste
- Curry leaves — finely chopped
- Coriander leaves A little — finely chopped
- Oil — for frying
Preparation
Step 1
Clean prawns well.
Step 2
Cook it well with salt and turmeric powder. Set aside.
Step 3
Warm the oil in a pan or a kadai.
Step 4
Add onion and sautT well.
Step 5
Add green chillies, curry leaves, coriander leaves and sautT well.
Step 6
Take it off the heat.
Step 7
Add mashed potatoes and cooked prawns and Stir everything together thoroughly.
Step 8
Make small balls off the above mixture and shape them into cutlets.
Step 9
Dip them first in beaten egg and roll them in bread crumbs.
Step 10
Fry in hot oil them in hot oil, till they turn brown in colour.
Tip
Drain on a wire rack instead of paper towels — the rack keeps the bottom from getting steamy and losing its crispness.
