Chemeen Manga Curry In Kerala Style
This homestyle prawn curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 4 servings
- 1/2 kg Prawns cleaned & deveined
- 1 nos Raw mango — sliced
- 1 nos Onion — chopped
- 3 nos Green chillies
- 5 nos Shallots — chopped
- 1 cup Coconut — grated
- 1 nos Tomato — sliced
- 2 tsp Ginger — chopped
- 2 tsp Garlic — chopped
- Asafoetida A pinch (Kayam)
- 1 tsp Fenugreek seeds (Uluva)
- 1 tbsp Coriander powder
- 2 tsp Chilly powder
- 1 tsp Turmeric powder
- Curry leaves, a few
- Salt, to taste
Preparation
Step 1
For preparing chemeen manga curry, grind coconut, green chillies, ginger and garlic.
Step 2
Heat oil, fry onion, tomato, coriander powder, chilly powder and turmeric powder. Add the mango slices and cook with some water.
Step 3
When the mangoes are half done, add the coconut paste and Stir everything together thoroughly. Fry again. Add salt and the prawns pieces. Again add little water and cook the prawns with covered lid.
Step 4
Take it off the heat. when done. Heat oil, fry the chopped shallots, fenugreek seeds, asafoetida and curry leaves.
Step 5
When the shallots become brown color, pour over the curry.
Step 6
Chemeen manga curry in kerala style is ready.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
