Cheesy Puffs
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 1 servings
- 500 g Potatoes boiled
- 250 g Peas shelled
- 150 g Carrots — grated
- 1 tsp Coriander leaves
- 5 nos Green chillies
- 1/2 tsp Pepper powder
- 6 tsp Allpurpose flour Maida
- 7 tbsp Bread crumbs
- 2 tsp Lime juice
- 25 g Cheese
- Salt, to taste
- 100 g Butter
- 6 tbsp Cream
- Oil — for frying
Preparation
Step 1
Mix together boiled peas, salt, pepper and lime juice and keep them in refrigerator.
Step 2
Mix together butter, cheese and cream and keep it in the freezer.
Step 3
Mash potatoes and add to it carrots, coriander leaves, green chillies, peas mixture, salt and pepper. Stir everything together thoroughly.
Step 4
Get a little mixture at a time on your palm.
Step 5
Fill in the frozen cream and make rolls.
Step 6
Make a thin batter by mixing water and maida.
Step 7
Dip the above rolls in batter and roll them on bread crumbs.
Step 8
Fry in hot oil the rolls in hot oil.
Tip
Good shallots are the backbone of Kerala cooking. They should be small, pink-purple, and strong-smelling. Large onions can substitute, but the flavour will be different.
