Cheera Cocunut Rice
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 4 servings
- 3 Bundles Spinach (Cheera)
- 1 cup Coconut — grated
- 2 Spoon Red chilly powder
- 2 Pinches Turmeric powder
- Oil, to taste
- 2 nos Onion — sliced
- 2 cup Boiled rice
- 3 sprig Curry leaves
- Salt, to taste
- 1 nos Lemon
- 1 nos Carrot — grated
- 2 nos Green chillies
- Coriander leaves — cut into pieces
Preparation
Step 1
Set a pan over medium heat and pour in the oil.
Step 2
Fry the sliced onions until it turns light brownish.
Step 3
Add salt, red chilly powder and curry leaves and fry.
Step 4
Add cut cheera and cook by putting the lid over the pan.
Step 5
When done, add the grated cocunut. Stir everything together thoroughly.
Step 6
Add boiled rice and Stir everything together thoroughly. Set aside.
Step 7
Mix the grated carrot, salt, green chilly and coriander leaves well and sprinkle on the cheera rice. Serve hot.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
