Challaas (Salad)
A fresh, crunchy side that adds a cool contrast to the spiced dishes on a Kerala meal plate. Light seasoning, fresh ingredients, and a simplicity that lets each component speak for itself.
Ingredientsfor 5 servings
- 3 nos Red Onion medium
- 3-4 Green hot chillies sliced diagonally, small
- 2 nos Lemon medium
- Salt, to taste
Preparation
Step 1
Add salt to the sliced chillies.
Step 2
Add some sliced onion and Stir everything together thoroughly. Use a spoon or hand to squeeze the juices out of the chillies. This works well when mixed with salt.
Step 3
Squeeze the juices out of some (about 1 Tbsp) onion slices.
Step 4
Mix in the rest of the onion.
Step 5
Add the lime juice and Stir everything together thoroughly.
Step 6
Allow it to stand covered for 10-15 minutes.
Step 7
Note: Amount of chillies may be increased or decreased depending upon your need.
Tip
Good shallots are the backbone of Kerala cooking. They should be small, pink-purple, and strong-smelling. Large onions can substitute, but the flavour will be different.
