Chala Fry Masala
Slow-roasted in coconut oil with a generous hand of spices, this mixed fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 2 servings
- 4 nos Sardines Chala
- 6 nos Shallots — chopped (Kunjulli)
- 1 nos Onion — chopped
- 1 nos Tomato — sliced
- 2 tsp Chilly powder
- 1 tsp Masala powder
- 1/2 tsp Pepper powder
- 1/4 tsp Turmeric powder
Preparation
Step 1
For preparing chala fry masala, first clean the fish and marinate with ingredients for marination. Set aside for 10 minutes.
Step 2
After this, fry fish in low flame. Do not fry in hot oil it. Once fried, set aside.
Step 3
Then take another pan to make the masala.
Step 4
Once the pan is hot, add the oil used for frying fish. Add shallots and onion. cook it, stirring well. Once done, add ingredients for masala. Add tomato and cook it, stirring for 5 minutes thoroughly.
Step 5
After that, add 1 glass water and mix it properly. Add the fried fish and keep it in medium flame till water starts boiling. season with salt to your taste in the end if required.
Step 6
Chala fry masala is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
