Chakkara Choru - Jaggery Rice
Chakkara Choru or Jaggery Rice is a tasty dish very popular in Malabar region. This is usually served during special occasions like nombu etc. The dish is unique and special with rice cooked in a pressure cooker along with jaggery, coconut rice and other ingredients.
Ingredientsfor 3 servings
- 1 cup White rice (pachari)
- 2.5 cup Coconut milk/Milk
- 1 cup Melted jaggery add more according to your choice
- 1/4 cup Coconut — grated
- 4 nos Cardamom
- Salt a pinch
- 7 Each Cashews /Raisins
- 2 tbsp Ghee
Preparation
Step 1
First wash and cook rice with all the ingredients upto raisins in a pressure cooker by adding 1 cup of water on high heat for one whistle.
Step 2
After one whistle, cook on low heat for 15 minute and turn off the heat. When the pressure releases, open the lid and Stir everything together thoroughly.
Step 3
Heat ghee in a pan, fry the cashews, raisins and add this to the Chakkara Choru.
Step 4
Chakkara Choru is ready. Serve hot.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
