Chakkakuru Vada | Jackfruit Seeds Vada
A quick and easy appetizer and goes well with hot tea. Jackfruit Seeds Vada is a famous street side food in Kerala. Vada is a common term for many different types of savory fritter type snacks from South India.
Ingredientsfor 5 servings
- 1/2 kg Chakkakuru Jackfruit seeds
- 3 tsp Green Chilli — chopped
- 4 tsp Ginger — chopped
- 10 nos Curry leaves
- 1/4 cup Shallots — chopped
- 2 tbsp Besan flour
- Salt, to taste
- To fry Oil
Preparation
Step 1
Remove the outer white layer and the brown thinner skin of the Chakkakuru (Jackfruit seeds). Cook this Chakkakuru (Jackfruit Seeds) with required water for about 10 minutes (preferably in a pressure cooker). After 2 - 3 whistles, turn off the heat and make sure that the Chakkakuru are cooked properly.
Step 2
Smash the cooked Chakkakuru well and change it into another big plate/Vessel. Add Kadala Maavu, Chopped Green Chilli, Curry leaves, Ginger and Shallots/Onion and required quantity of Salt. Only if necessary add 1 – 2 Tspns of Water and mix it well and keep the dough aside for about ten minutes.
Step 3
After about ten minutes, apply some Coconut/refined Oil in your palm and take the dough in small quantities (based on the size of Vadas that you want to make) and flatten the dough in round shape and keep them in a plate.
Step 4
Heat the oil in a Frying pan/Cheenachatti. Change flattened doughs into the hot oil and cook/fry one side of the Vada. Then turn it (Vada) into other side and cook/fry that side also properly. Continue the same procedure for making more Vadas.
Step 5
The delicious and nutritious snack is ready. This Vada can be served with Sauce/Coconut Chutney/Green Chutney.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
