Chakkakuru Muringayila Thoran | Jackfruit Seeds Drumstick Leaves Stir Fry
Finely chopped jackfruit stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 1 cup Jackfruit seeds
- 1/4 tsp Turmeric powder
- 1/2 tsp Chilly powder
- 1/2 cup Coconut — grated
- 1 nos Green chilly
- 2 Cloves garlic
- 1 tbsp Coconut oil
- 1/2 tsp Mustard seeds
- Salt, to taste
Preparation
Step 1
Pressure cook the chakkakuru by adding turmeric powder, chilly powder, required salt and water.
Step 2
Mean while grind the grated coconut, green chilly and garlic into a coarse paste.
Step 3
Clean, wash and drain the muringayila.
Step 4
Warm the oil in a pan and let the mustard seeds crackle. Add muringayila and cook for 1 minute.
Step 5
Next, add cooked chakkakuru and Stir everything together thoroughly.
Step 6
Next, add coconut mixture and Fold everything together gently.
Step 7
Continue cooking for 2 to 3 minutes and turn off the heat.
Step 8
Serve alongside steamed rice.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
