Chakkakuru-Manga Curry
Jackfruit seeds & Mango - a well known favorite in Kerala cuisine.
Ingredientsfor 5 servings
- 1 nos Unripe green mango — cut into medium size pieces
- 2 cup Jackfruit seeds(washed, cleaned and — cut into thin juliennes) chakka kuru
- 2 nos Green chillies — slit
- 3/4 cup Coconut ground into a smooth paste — grated
- 3/4 tsp Red chilly powder
- 1/4 tsp Turmeric powder
- 1 tsp Mustard seeds
- 2 nos Red chillies (Kollamulaku)
- 2 nos Shallots — chopped (Kunjulli)
- Curry leaves A sprig
- Oil, to taste
- Salt, to taste
Preparation
Step 1
Cook jackfruit seeds along with 1 cup water, green chillies and salt on a medium heat.
Step 2
When they are half done, add raw mangoes, turmeric powder and red chilly powder and cook until they are soft and tender.
Step 3
Add ground coconut and Stir everything together thoroughly.
Step 4
Let it come to a slow boil.
Step 5
Switch of the heat and set aside.
Step 6
Heat the oil in another pan.
Step 7
Allow mustard seeds to allow to crackle.
Step 8
Add red chillies, shallots and curry leaves and fry until they are brown.
Step 9
Pour this seasoning over the curry.
Step 10
Goes well with rice.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
