Chakka Varuthath (Jack-fruit Green, Chips)

Ingredientsfor 4 servings
- 1 medium Pacha Chakka Jack fruit, Green
- Salt mixed water, to taste
- Coconut/Refined Oil, to taste
Preparation
Step 1
Cut the Chakka (Jack-fruit) into small pieces.
Step 2
Get the Chakka chulas (Jackfruit bulbs) out.
Step 3
Clean the chakkachulas (jackfruit bulbs).
Step 4
Cut the jackfruit bulbs slightly and remove the seeds, and then slice the bulbs into thin, long size as shown in above picture.
Step 5
Heat about half-a-litre Oil and then put the Jack-fruit pieces into the Oil and stir it.
Step 6
When the colour of the Jack-fruit pieces turns into golden/brown, add required quantity of Salt water into it (or salt powder can add after taking out the fried Jack-fruit pieces from the Oil) and after about five minutes, take the fried Jack-fruit pieces out from the Oil and keep them in an air tight jar.
Step 7
Chakka Varuthath (Jack-fruit chips) is ready and can be served for evening tea/coffee.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
