Chakka Puzhukku | Jackfruit Stir Fry | Chakka Kuzhachathu
Kerala-style dry fry where jackfruit is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 4 servings
- 3 cup Jackfruit
- Salt, to taste
- 1/4 tsp Turmeric powder
- 1/2 tsp Chilli powder
- 1/4 cup Hot water
- 3 nos Green chilly
- 5 nos Shallots
- Curry leaves, a few
- 10 tbsp Coconut — grated
- 3 tbsp Coconut oil
- 3 nos Dried Red chilli
- 1/2 tsp Mustard seeds
- Curry leaves, a few
Preparation
Step 1
Cut the jackfruit into medium sizes, add little turmeric powder and salt to it.
Step 2
Stir everything together thoroughly.
Step 3
Steam let it go for 10-15 minutes.
Step 4
Crush shallots and green chilly.
Step 5
In a roomy mixing bowl, and add grated coconut, curry leaves, crushed shallots, green chilly and little turmeric powder. Fold everything together gently.
Step 6
Add it into the cooked jackfruit. Add little hot water and mash well. Adjust the salt.
Step 7
Now we have to temper the stir fry. Heat oil and let the mustard seeds crackle.Then break 3 dried red chillies and add it into the oil. Finally add some curry leaves and turn off the heat.
Step 8
Add this into the Puzhukku mixture and Stir everything together thoroughly.
Step 9
Serve.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
