Cauliflower With Curd
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 250 g Cauliflower florets
- 1/2 cup Curd
- 2 nos Onion — sliced
- 1 nos Garlic pods — grated
- 1/2 tsp Garam masala
- 1/2 tsp Ginger — grated
- 1/2 tsp Sugar
- Oil, to taste
- 3 Springs Coriander leaves — chopped
- 20 g Ghee
- Salt, to taste
Preparation
Step 1
For preparing cauliflower with curd, marinate cauliflower in the curd and salt. Set aside for an hour.
Step 2
Get a fry in hot oiling pan and heat oil. Fry the marinated cauliflower till it becomes light brown.
Step 3
Melt ghee in a pan and sautT onion, garlic, ginger and garam masala. Add the fried cauliflower and sugar. Stir everything together thoroughly.
Step 4
Cook on low heat till the cauliflower is done.
Step 5
Garnish with chopped coriander leaves.
Step 6
Cauliflower with curd is ready to serve with veg pulav, bread, paratha etc.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
