Cauliflower Pepper Masala
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 3 servings
- 1 nos Cauliflower small
- 2 nos Onion finely sliced, medium
- 5 nos Green Chillie — slit
- 1/4 tsp Turmeric powder
- Pepper, to taste
- Salt, to taste
- 1 tbsp Oil
Preparation
Step 1
Cut the cauliflower florets into medium sizes and immerse it in hot salt water for about an hour and drain.
Step 2
In a tablespoon of oil, cook finely sliced onions, green chillies for about 2 minutes.
Step 3
Add turmeric powder, salt & the florets and cook well.
Step 4
Reduce the flame and Put the lid on and cook. :-Do not add water, if required, just sprinkle water in between. Also, take care for the florets to not to be over cooked, it should be a bit crunchy.
Step 5
Add pepper powder to taste and curry leaves and toss well.
Step 6
Serve while still hot. :- This goes well with rice.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
