Cauliflower Masala Dry
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 1 tsp Mustard
- 1 tsp Coconut oil
- 1 cup Coconut — grated
- 2 Red chilli
- 1 cup Cauliflower
- 1 tsp Salt
- 1 tsp Chili powder
- 1 tsp Turmeric powder
- 1 tsp Gram masala
- 1 Onion
- 1 tsp Cumin seeds
Preparation
Step 1
Pour oil into a kadai and heat it and add mustard. When it allow to crackles add red chilli and cook for a minute.
Step 2
Add washed and cleaned cauliflower to this and Let it cook for 2 minutes.
Step 3
In another kadai add grated coconut, chilli powder and turmeric powder and gram masala. Let it cook for 2 minutes.
Step 4
Cook until the coconut becomes brown.
Step 5
Grind this coconut mix,onion and cumin seeds in a mixer.
Step 6
Add this ground mix to cauliflower. cook for a minute.
Step 7
Add 1 cup water to this and add salt.
Step 8
Close the lid and Let it cook for 5 minutes.
Step 9
Now cauliflower masala dry is ready to serve.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
