Cauliflower Egg Stir Fry With Video | Cauliflower Mutta Thoran
A classic Kerala thoran where egg meets freshly grated coconut in a quick, dry stir-fry. Mustard seeds crackle in coconut oil, curry leaves crisp up, and the whole thing comes together in minutes.
Ingredientsfor 4 servings
- To Marinate
- 200 g Cauliflower
- 5 Slit Green chillies
- 1 large Onions
- 1 Teaspoon Turmeric powder
- Salt
- Curry leaves
- 1 cup Coconut — shredded
- For Stir Fry
- 2 Tablespoon Oil
- 1 Teaspoon Mustard seeds
- 2 Numbers Eggs
Preparation
Step 1
To Prepare Cauliflower Egg Stir Fry Mix cauliflower, green chillies, onions, turmeric powder, salt, curry leaves and shredded coconut and keep it marinated for 15 minutes.
Step 2
Heat pan and add Oil. allow to crackle Mustard Seeds.
Step 3
Add the marinated cauliflower and mix it. Cook it with lid closed in the lowest flame for 10 to 15 minutes without water.
Step 4
Meantime mix Eggs with Salt and Pepper.
Step 5
Keep the cauliflower on a side and add the egg and stir fry it.
Step 6
Once egg is cooked, mix with cauliflower for few minutes. Then add Pepper Powder and mix it.
Step 7
Dry the dish for little bit and done.
Step 8
Serve the Cauliflower Egg Stir Fry with roti or rice.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
