Cauliflower-Bell Pepper Dish
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 1 nos Cauliflower pluck them in medium size flowers, medium
- 1 nos Green bell pepper diced in square
- 1 nos Potato diced in small squares, medium
- 1/2 Of Onion — sliced
- Ginger finely chopped)-1 1/4 ts
- 1 nos Tomato diced in small, medium
- 1 - Chilly powder
- 1/4 tsp Turmeric powder
- 1 - Oil
- Salt, to taste
- Coriander leaves — for garnishing
Preparation
Step 1
Wash the vegetables and set aside.
Step 2
Pour oil into a pan and heat it or a kadai.
Step 3
Add the onion and cook until it`s slight brown and translucent.
Step 4
Add the finely chopped ginger and garlic and cook until the raw smell disappears.
Step 5
Add the vegetables, turmeric powder, chilly powder and salt and Stir everything together thoroughly.
Step 6
Close the pan and reduce the flame.
Step 7
Do not add water.
Step 8
Half the way, add the chopped tomatoes and close the lid.
Step 9
Vegetables should be cooked through the steam.
Step 10
Once they are cooked, few water would remain still in the pan.
Step 11
Allow them to dry up without closing the lid.
Step 12
When done, garnish with few coriander leaves.
Step 13
Goes well with rice as side dish, chappathis and pooris.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
