Cashew Chicken Curry

Ingredientsfor 5 servings
- 500 g Chicken
- 2 cup Onions — finely chopped
- 2 tsp Chilly powder
- 1 tsp Coriander powder
- 1/4 tsp Turmeric powder
- Salt, to taste
- Coconut oil, to taste
- 1 tsp Mustard seeds
- 4 nos Onions Chopped length-wise
- Water, to taste
- 10 nos Cashews
- 2 nos Tomatoes — chopped
- Lemon Half of one
- 3 Stems Coriander leaves
- 2 nos Onion — chopped
- A small piece Ginger
- 1/2 tsp Cumin seeds
- 5 Cloves Garlic
Preparation
Step 1
For preparing Cashew Chicken Curry, blend together onions, ginger, cumin seeds and garlic in a mixer grinder. Set aside.
Step 2
Keep the cashew nuts immersed in water for 10 minutes.
Step 3
Blend it to paste in a mixer grinder.
Step 4
Set a pan over medium heat and pour in the oil.
Step 5
Add mustard seeds and when they allow to crackle, add onions (chopped length-wise) and sauté, till onion turns brown.
Step 6
Add the blended onion paste.
Step 7
Give it a good stir and add chilly powder, coriander powder and chopped tomatoes.
Step 8
Add turmeric powder, salt and add washed chicken pieces.
Step 9
Add enough water and allow it to boil.
Step 10
When the chicken pieces are cooked, add lemon juice and give it a good stir.
Step 11
Add blended cashews.
Step 12
When mixture starts boiling again, turn off the heat.
Step 13
Garnish with coriander leaves.
Tip
For a thicker gravy, cook uncovered on medium heat for the last few minutes. For a thinner consistency, add a splash of warm water.
