Cashew ,cauliflower, Peas & Pineapple Curry In Coc
Quick and easy , this coconut milk vegetarian dish goes well with chapattis.
Ingredientsfor 6 servings
- 1/2 cup Cashew nuts
- 1/2 cup Green peas
- 1 cup Cut cauliflower
- 1/2 cup Cut pineapple
- 1/2 cup Coconut milk
- 1/2 Onion — sliced
- 2 Green chilli
- 1/4 piece Ginger
- 1/4 tsp Turmeric
- 1/4 tsp Pepper powder
- 1/4 tsp Garam masala
- Curry leaves
Preparation
Step 1
Boil, cashew nut, peas, cauliflower and pineapple in 1/2 cup wateradd turmeric, salt, pepper powder, garam masala, set aside.
Step 2
Add 2 table spoon oil in a kadai, or walk, fry the sliced onions, green chilli and ginger and curry leaves until the onions are nice and brown, add the cook vegetables and give it a good stir, add coconut milk and let it bubble for 2 minutes.taste salt.
Step 3
Pour in a dish and add coriander leaves and lime juice. Goes well with chappatis or Rice.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
