Carrot-Egg Sandwich
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 1 servings
- 2 nos Bread slices
- 1/2 cup Carrot — grated
- 1/4 cup Onion — cut into small pieces
- 1/2 tsp Ginger paste
- 1 nos Green chilly — cut into small pieces
- Curry leaves
- 1 nos Egg
- 1 tsp Butter
- Salt, to taste
Preparation
Step 1
Into a frying pan, add butter & cook carrot, onion, ginger paste, green chillies and curry leaves for about 2 minutes.
Step 2
Beat egg & add to the pan and scramble it untill the egg is well done & Stir everything together thoroughly together.
Step 3
Add salt & take it off the heat.
Step 4
Remove the sides of the bread & keep the fillings inside and press both slices together.
Step 5
Cut into two triangular pieces.
Step 6
If needed heat both sides on a pan or microwave it.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
