Carrot Cake - Traditional
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 5 servings
- 3 cup Refined flour
- 3 cup Sugar
- 1 tsp Baking powder
- 1 tsp Cinnamon — ground
- 3 nos Egg
- 1 cup Raw carrot — grated
- 1/4 tsp Salt
- 300 g Melted butter
- 1/2 tsp Vanilla essence
Preparation
Step 1
Preheat the oven to 170C and Grease the cake tray with little butter.
Step 2
Combine the dry ingredients - 3 cups of Refined flour, 1 teaspoon baking powder, 1 teaspoon cinnamon and 1/4 teaspoon salt.
Step 3
Mix the wet ingredients - Put 300gms melted butter in a large bowl and beat with 3 cups of sugar. Beat in 3 eggs one at a time, then add in the dry ingredients followed by 1 cup of grated carrot.
Step 4
Pour the cake mixture into the greased cake tray, and bake for about 40 minutes or till done. When it`s done, take the cake out of the oven and cool in the cake tray for about 10 minutes.
Step 5
Carrot Cake is ready! :- Remove the Carrot Cake from the tray and serve! :- eating Carrot Cake!
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
