Carrot Cake - Kerala Style
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 5 servings
- 1 nos Carrot medium
- 3 nos Eggs
- 2 Sticks Butter 200 gm
- 11/2 cup Allpurpose flour Maida
- 11/2 cup Sugar
- 1 tsp Vanilla essence
- Caramel, to taste
- 11/2 tsp Baking powder
Preparation
Step 1
Pre heat oven to 180 Deg celcius.
Step 2
Make caramel using 2 tbsp of sugar and cool it.
Step 3
Grate the carrot.
Step 4
Melt half a stick of butter in a pan.
Step 5
Add 2 tbsp of sugar and the carrot and cook until all the water evaporates.
Step 6
Let it cool for some time.
Step 7
Beat the remaining butter and sugar, till all the sugar melts.
Step 8
Add the eggs one by one.
Step 9
Add maida mixed with baking powder, a little by little and beat well.
Step 10
Add vanilla essence, caramel and carrot and Stir everything together thoroughly.
Step 11
Pour into a greased pan and bake until done.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
