Carrot-Beetroot Juice
A refreshing drink that cools you down on a hot Kerala afternoon. Made with fresh ingredients and served chilled, it is the kind of thing you keep refilling without realising.
Ingredientsfor 4 servings
- 6-8 nos Carrot
- 1 nos Beetroot
- 1/4 piece Ginger
- 1 nos Lemon wedges — peeled
Preparation
Step 1
For preparing carrot-beetroot juice, clean the vegetables well.
Step 2
Place a tall glass under the juicer and run the beetroot through the juicer first.
Step 3
Then run the carrots through the juicer and lime wedges at last.
Step 4
Do not stir the juice.
Step 5
Carrot-Beetroot juice is ready. Serve it garnished with carrot slices.

Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
