Carrot Banana Delight
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 4 servings
- 1 nos Carrot big
- 1 nos Banana big
- 12 nos Almonds Badam
- 12 nos Cashewnuts
- 11/2 cup Milk
- Sugar, to taste
Preparation
Step 1
Wash the carrot, scrape it well and cut it into pieces.
Step 2
Boil them well with sufficient water.
Step 3
Allow it to cool.
Step 4
Strain to separate the pieces from water.
Step 5
Mix together the carrot pieces, sliced banana, almonds, cashews, sugar and 1/2 a glass milk.
Step 6
Grind them well, till you get a thick smooth shake.
Step 7
Add the rest of the milk and blend well.
Step 8
Serve chilled.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
